We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

After the hike, we all went to lunch at a small place at the bottom of the hill. Located in a house, we ate lunch in the proprietors bedroom! What a hoot! Rogin is the Best of the Best! This tour company delivered for us and we are extremely grateful.

Sweet and Sour Pork with Diced Pineapple

Introduction:
This is a dish with bright color in Guangdong Cuisine. The flavored flour breading tastes sweet and sour, has a crispy outside and is tender on the inside.

Ingredients
● Main ingredient: Pork 200g
● Other ingredients: Pineapple 50g, Green Pepper 20g, Red Pepper 20g, White or Yellow Onion 20g
● Seasonings: Chinese Onion, garlic, ginger, ketchup 30g, white vinegar 10g, soy sauce 3g, cooking wine 15g, salt 15g, white pepper 3g, oil 250g, corn starch 60g, sesame oil 2g, eggs 50g, sugar 20g

Producer:
1. Wash the pork, and slice onto 2.5cm dices, add some salt, white pepper and cooking wine in with the pork. Mix well to combine, and then set aside.
2. Mince the Chinese Onion and ginger. Then make the batter with cornstarch and eggs, mixing well.
3. Put the diced meat into the batter, and mix until the meat is covered evenly with the batter, and then remove the diced meat from the wet batter and coat with some dry cornstarch.
4. Next make the sweet and sour sauce: Mix the ketchup, Chinese onion, ginger, cooking wine, salt, white pepper, soy sauce, sugar, white vinegar, sesame oil and cornstarch together, then set aside.
5. Heat the oil in a wok until the temperature is medium high, then add the diced meat in, and fry until it changes color. Then raise the temperature, and fry until the pieces are crispy outside. Add the other ingredients in to cook; then move to a pan.
6. Hear the wok, fry the Chinese onion and garlic, pour in the sauce, bring it to a boil with high hear, add the main ingredients back in, add the other ingredients, then stir will and place it all onto a dish to serve.
