We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

After the hike, we all went to lunch at a small place at the bottom of the hill. Located in a house, we ate lunch in the proprietors bedroom! What a hoot! Rogin is the Best of the Best! This tour company delivered for us and we are extremely grateful.

Xian Cold Noodle

Xian cold noodle (西安凉皮) is a famous snack in Shaanxi province. Its unique taste is suitable for all ages. On the basis of different raw material, Xian cold noodle is divided into mi pi (made from rice) and mian pi (made from flour).

Qinzhen abounds in rice from ancient times. Qinzhen mi pi (秦镇米皮) has a long history, which could be traced back to Qin Dynasty when Qinzhen mi pi was sacrificed to royal as offerings. In the 8th year of Dezong emperor in Qing Dynasty, Mt. Meng Datian opened a Qinzhen mi pi store in Yaowang building in Qinzhen.

It enjoyed a high reputation, customers proceeding in a steady stream. Up to now, it has been handed down for four generations. Qinzhen mi pi features with chewiness, thin, slid and slimness. Its seasoning is made from good chili and cole seed oil, therefore, the concoctive mi pi is red just fire, sour and refreshing.

Qishan mian pi (岐山面皮) , one representative of Shaanxi snacks, is evolved from leng tao mian of Tang Dynasty with the character of soft, fragrant and chewiness. Different from mi pi’s cooking, Qishan mian pi is to roll the flour firstly, then steam and finally cut into pieces. Qishan mian pi is prevailing in Xian.

Hanzhong cold noodle (汉中凉皮) is also popular in Xian. Hanzhong is in the south of Qinling Mountain in Shaanxi province. It is rich in rice from ancient time, known as “the land of rice and fish”. The fragrance of Hanzhong cold noodle is not as strong as Qinzhen mi pi’s, however, it is more soft and delicate.
