Minced noodles (臊子面) is the flavored snack of Shaanxi. It takes an important role in central Shaanxi plain. It is a must in important occasions such as wedding, funeral, birthday feast, full moon wine for kids, etc.. A qualified minced noodles character with thin and long noodles, even thickness, fragrant minced meat, sour and hot soup and chewiness.
Qishan minced noodles is the most celebrate. It has a long historical standing, which could be traced back to Shang and Zhou Dynasties. It became popular in Qing Dynasty. It is said that in the village, minced noodles is the first meal in the morning of the New Year. They sacrifice ancestors with minced noodles as well.
Minced noodles is rich in sweet and smooth starch, sugar, protein, calcium, iron, phosphorus, potassium, magnesium, thiamin, riboflavin, fiber, vitamin A, and three amino acids and other minerals. It has the function to nourishthe heart and kidney, spleen and intestines thick effectiveness.
The soup is the soul of the minced noodles. It take the diced meat as the main material. Firstly, fry the diced meat with sugar, chopped ginger, wild pepper, soy sauce and red chilli powder. Pour the soup on the boiled noodles. The minced noodles is finished. In old days, people took minced noodles as an examination for the new brides’ cooking skill.
