We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

After the hike, we all went to lunch at a small place at the bottom of the hill. Located in a house, we ate lunch in the proprietors bedroom! What a hoot! Rogin is the Best of the Best! This tour company delivered for us and we are extremely grateful.

Crispy Fried Noodles

Crispy fried noodles (金线油塔) is a precious traditional snack in Xian. It is multi-layer of filiaments, just like a golden thread when lifted and a pinecone when laying down, hence the name. According to legend, it began in the Tang Dynasty, originally called "oil collapse".


















In the Qing Dynasty it got improved. They chose the finest flour, pig oil to increased levels of cake. Steam was instead of fried and turn the name of "golden thread oil tower" from “oil collapse”. While eating, accompanied by onion festival, sweet sauce, etc., a unique distinctive flavor.

Cooking Process
Material: flour 500g, pig oil 200g, five spice powder, salt, chopped green onion, sweet bean sauce
Procedure: 1. Dough mixing. Stir flour into flocculant with a small amount of water. Rub into dough. Covered a clothe for 5 minutes.


















2. Wiredrawing and disk type. Roll the dough into a 3-inch weight slice. Add cut pig oil and salt evenly. Roll up the dough sheet, cut into pieces. Then roll every pieces into a inch and a half thick, cut them into threads, then roll up and coil into a shape of tower.
3.Steam. lay out coiled noodles in the steamer in order, steam for 30 minutes.
