Shanghai Nanxiang Small Steamed Bun(南翔小笼包) has a history of more than 100 years. It is an important part of Shanghai culture. The steps of making Nanxiang small steamed bun
Raw material: Fresh pork leg before, fine refined white flour, cooked pork jelly salad
Auxiliary material: Refined oil, salt, sugar, green onion, ginger
The proportion of formula:
First, every ten Nanxiang Small Steamed Buns need 50 gram flour.
Second, each small steamed bun need 6 gram meat stuffing.
Third, put moderate pork jelly salad into the meat stuffing.
Fourth, add the amount of water, salt, sugar, green onion, and ginger and so on to each kilogram pig meat.
Steps:
Filling: fresh pork processed into meat and then place it in a container, then add pork jelly salad to it according to the ratio and the amount of water, salt, sugar, green onion, ginger. Then stir it into a paste and set aside;
