We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

Nanxiang Small Steamed Bun

Shanghai Nanxiang Small Steamed Bun(南翔小笼包) has a history of more than 100 years. It is an important part of Shanghai culture. Nanxiang small steamed bun stuffing is made with ham sandwich meat, do not add onions, garlic, just add a little ginger, pork jelly salad, salt, soy sauce, sugar and water to blend. The skin of the steamed bun is not made of refined flour fermented. Steamed bun has small size and the shape of pagodas which looks translucent and transparent yellow crystal. If you eat the small steamed bun when served with ginger and vinegar, accompanied by a bowl of eggs, silk soup, and it tastes better. Nanxiang small steamed bun known for thin, stuffing, heavy stewed, delicious and it is one snack welcomed by domestic and foreign customers.



















The steps of making Nanxiang small steamed bun
Raw material: Fresh pork leg before, fine refined white flour, cooked pork jelly salad
Auxiliary material: Refined oil, salt, sugar, green onion, ginger
The proportion of formula:
First, every ten Nanxiang Small Steamed Buns need 50 gram flour.
Second, each small steamed bun need 6 gram meat stuffing.
Third, put moderate pork jelly salad into the meat stuffing.
Fourth, add the amount of water, salt, sugar, green onion, and ginger and so on to each kilogram pig meat.

Steps:
Filling: fresh pork processed into meat and then place it in a container, then add pork jelly salad to it according to the ratio and the amount of water, salt, sugar, green onion, ginger. Then stir it into a paste and set aside;
Flour blank: mixing the right amount of water into the refined white flour and knead the dough, then sprinkle with the right amount of flour and the amount of refined oil, and rub repeatedly, make a soft and moderate dough;
Buns: Divide the dough into small cages face blank according to the ratio of the amount. Then knead the flour blank into the shape of paste by hands. Put the meat stuffing in to the paste and roll it into a bun. Each bun must have more than 14 folds.
Steam cooking: put the steamed buns into the straw bamboo basket and steam them. Nanxiang small steamed buns need to be steamed on the boiling water for 5 minutes.


















There are two famous steamed bun produced within the stores in Shanghai. One is inside the Nanxiang Steamed Bun Restaurant in Yuyuan business center, another is the Ancient Yi Park Restaurant on Tibetan Yan'an Road.

Nanxiang Steamed Bun Restaurant: Nanxiang Steamed Bun Restaurant is not hard to find, but if you are a newcomer, you may not eat the most authentic steamed buns even when you come to the front of the store. Although this is only a two-story small building, but it offers a variety of different price and quality of steamed buns, you can choose according to your budget and needs. First of all, ground floor takeaway: Nanxiang Steamed Bun Restaurant on the ground floor exclusively for takeout, there are almost all day long row of the team. It sells the cheapest dumplings, 16steamed buns for only 8 yuan, but the quality is the worst. At best, it can only be regarded as a snack. If you're hungry, do not want to spend too much money, it will worth to buy. But if you are specifically designed for a delicious treat, then come on quickly upstairs, do not be lively attracted long lines.

Second, second floor lobby: you can pass narrow stairs to the second floor. When you go to the upstairs room of the house, you’ll first see lots of people waiting here. The second floor sells better steamed buns than downstairs. It is about 15 yuan a cage and one cage has 6 steamed buns. Due to relatively modest price, many people will choose to eat here. But if want to eat the best steamed buns, you must go to the innermost Changxing Hall.

Third, second floor Changxing Hall: come to an end along the corridor is the Changxing hall, where people obviously less than the outside. Changxing Hall sells two kinds steamed buns, one is tailor-made Nanxiang Small Steamed Bun which is 20 yuan for 6 steamed buns and the other is specialty Nanxiang Small Steamed Bun which is 40 yuan for 6 steamed buns.
