We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

After the hike, we all went to lunch at a small place at the bottom of the hill. Located in a house, we ate lunch in the proprietors bedroom! What a hoot! Rogin is the Best of the Best! This tour company delivered for us and we are extremely grateful.

Glutinous Rice Roll

Glutinous Rice Roll(粢饭糕) is a traditional breakfast popular in regions south of the Yangtze River. It is an important part of Shanghai culture. Its shape is rectangular and it is about three to four centimeters, looks like a pair of cards that has not been opened. Shanghai traditional breakfast “four heavenly guardians” are pancake, fried bread stick, glutinous rice and soybean milk. However, according to another different saying, the glutinous rice roll should replace the glutinous rice.



















As a member of fried foods breakfast, glutinous rice roll stall coexist with fried bread stick stall. And it is difficult to find glutinous rice roll in Chinese fast food store. At the same time, more and more Chinese restaurants treat glutinous rice roll as a delicate dessert, which becomes more exquisite and has a better outward appearance. Another tradition of glutinous rice roll is that housewives always use overnight rice to cook glutinous rice roll. In this way, glutinous rice roll not only becomes breakfast of the whole family, but also solve the problem of leftovers.

According to legend, during the Spring and Autumn Period, Wu Zixu pressed cooked rice into a brick and use it as grain reserve at the door of Suzhou city to avoid people suffer from famine in the war and planted with town grain group as against natural disasters. Wu Zixu died shortly after, the emperor of Yue Goujian send armed forces to suppress Wu. When the capital city was besieged by Yue army, the people dug up from humble rice masonry, crack, re-cooked, divided the food. Since then, people would use bricks made of glutinous rice cake in every harvest year, in order to pay homage to Wu Zixu. So far, glutinous rice roll is still prepared before the Spring Festival every year that people all over the south regions will do the dishes, and fried glutinous rice roll is one of a kind way of cooking.  

















The cooking process of glutinous rice roll is as follows.
First, wash the rice clean.
Second, take a pot and pour rice into it. Add water to immerse rice for about 5 cm high, then add salt. Then stir the pot on to boil, then cover and cook in low heat about 10 minutes, until the rice all expand and leave only a small amount of rice water on the surface (thick rice soup). Then, cover the pot and cook in low heat and continue simmer for about 10 minutes, remove and cook until rice is done.
Third, take the appropriate size enamel or aluminum side dish, put some oil around the contact points, then fill with rice into the inside scoop all. Cover the rice with a damp cloth to clean the rice, after pressing flat, throw off the cloth, then fill with a cover panel is placed on a clean, pour cake billet cooling.
Fourth, cut the cooled cake into appropriate size of the long box with knife.
Fifth, after putting the oil into the wok, till boiling. Take a few pieces of rice cake blanks, oneafter another along the soup into the pot, and gently flip with a blade, until the whole rice roll to golden yellow cake then pick it out. So the fried glutinous rice roll is done.
