We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

After the hike, we all went to lunch at a small place at the bottom of the hill. Located in a house, we ate lunch in the proprietors bedroom! What a hoot! Rogin is the Best of the Best! This tour company delivered for us and we are extremely grateful.

Yueshengzhai Sauced Meat Store

Yueshengzhai (月盛斋), situated in the west of Qianmen Street, is a time-honored store engaged in Muslim sauced meat. It was opened up in the 40th year of Qianlong Emperor (in 1775), about over 230 years from nowadays. It mainly takes on the supply of Muslim meat food of ethnic minority in Beijing who believed in Islam all the year round. The main products include: cooked meat food, sea food, frozen food and pastry.


















Originally, Yueshengzhai was started by a Hui people whose family named was Ma. He was once a temporary worker of Ministry of Rites in feudal China, responsible for odd jobs in imperial kitchen. He took advantage of the opportunity to learn the technique of sauced meat from imperial kitchen.

The processing technique of Yueshengzhai bears unique characteristic of distinctive ethnic flavor. It is the result from the combination of sauce technology of imperial kitchen in Qing Dynasty and traditional folk technique. It not only widely absorbs the essence of traditional Chinese food culture, but also introduces Arabic spice, and learns from healthy theory of traditional Chinese medicine.


















Sauced mutton is the most delicious in Yueshengzhai. The main material-mutton must be the first-rate, born in Inner Mongolia. In order to the pure taste, it is forbade to store, transport and sell with other meat. All of the managers and cookers are Muslim, so the course of working is absolutely authentic.

Firstly, brew a pot of soup with water, yellow soybean paste, scallion, ginger, sugar and salt. Then put the mutton into the soup as the order from tough to tender. After boil for one hour, add old soup (a sort of soup boiled for many times). Continue to boil for six or seven hours.
