We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

After the hike, we all went to lunch at a small place at the bottom of the hill. Located in a house, we ate lunch in the proprietors bedroom! What a hoot! Rogin is the Best of the Best! This tour company delivered for us and we are extremely grateful.

Liubiju Sauce and Pickles Store

As the longest and most significant pickles store, Liubiju (六必居) features with bright color, crisp, and sauce flavor. Liubiju means “House of Six Musts” including prime raw material, choice ingredients, the best yeast, pure water, proper curing and flavor pickles.

Liubiju sauce and pickles store was set up in the 9th year of Emperor Jiajing (1530), about 485 years from today. It is not only an essential household pickles but also a must on state banquet. Liubiju sauce and pickles mainly contain sauce ginger shoot, sauce eight-treasure pickles, sauce cucumber, sugar garlic, and so on. It is one part of Beijing culture.


















Sauce eight-treasure pickles, mainly containing eight raw materials, is classified into high eight-treasure pickles, sweet eight-treasure pickles and middle eight-treasure pickles. High eight-treasure pickles is made from sweet sauce with cucumber, kohlrabi, lotus roots, cowpea, manna and stachys floridana as raw material. Middle eight-treasure pickles is sauced with soybean paste with kohlrabi, cucumber, lotus roots, cowpea, manna, shaped squash, eggplant and shredded ginger as raw material.

Pickled Garlic is the famous product of Liubiju. The purple six petal garlic is the best choice. After process of peeling, steeping, stewing and fitting into jar, the pickled garlic is made. It is popular by Japan, Southeast Asia and Europe for the sweet and slightly spicy taste.


















The Historical Development
According to the study of Deng Tuo, the party secretary of Beijing, Liubiju was set up in the period of Emperor Kangxi in Qing Dynasty. It was named Yuanshenghao in the 6th year of Emperor Yongzheng and changed into Liubiju in the 6th year of Emperor Qianlong. When the Eight-Power Allied Forces attacked Beijing, all the store including Liubiju in Qianmen Street were destroyed.

A fellow named Zhang Duobiao snatched the stele of Liubiju through fire at the risk of his life. The stele was survived, so Liubiju continued to operate. Tradition has it that during the anti-Japanese war, Chiang Kai-shek once ordered Liubiju sauce and pickles at his banquet. It was clear that how popular Liubiju was.
